It's getting cold out, which means our dogs like to snuggle. Who am i kidding, they will usually snyggle anytime. And occasionally sleep under the covers. They don't normally stay all night, but this made me laugh. Look at us all piled in bed. Haha!

So excited to announce Kristin and Casey are expecting again. They are due June 5. This pic is from about a month ago, but we should get an updated one on Wednesday. That will be their 13 week appointment, and with Rylan at their 13 week appt. they told them that it was a 90% chance she would be a girl. It was right, obviously! So we are hoping to find out the sex on Thanksgiving. I have a strong feeling it will be a boy. I have a pretty good track record of guessing, but we'll see. Tim said he thinks it's a boy, but could be a girl too. Well yes, yes it could. Such a bold guess :) I'll keep you all posted if we were right!

My good friend Caitlin works at the Springfield Ballet and was throwing a fundraiser happy hour. Trina, Kristina and I stopped by right after work. The way they were making money was you bought raffle tickets, them put your tickets in one of the six raffle items you wanted to win. These weren't just individual items they were baskets loaded up with amazing prizes. One had 4 Chiefs tickets with a VIP Parking/Tailgating pass (+more), one was stuffed full of shopping gift certificates and jewelry, another a date night package with with dinner and movies and shows! I broke my 25 tickets in between Date Night, Kids Fun, Girls Night Out and Holiday Survival. It was time to draw and our names were on our tickets so Caitlin comes bouncing over to our table with this huge Holiday Survival Basket all for me! I never win anything!! I was with Kristina and she's the luckiest person I know so I figured she'd win, but not me. 4-week boot camp, 60-min massage (which I've already used), facial, pedicure kit with awesome fuzzy socks, candles, a one night stay at double tree, chocolate covered pretzels, self tanning stuff, 3 pies from The Pie Box, $40 Target Giftcard (which I've also used), hair shampoo and style. Told you they were awesome baskets! Well the a few minutes later Caitlin is back at our table with another large basket of goodies. This one is titled The Teacher Basket and Kristina had won. That's more like it! Poor Trina was the only one not to win. We both started giving her random little things out of out baskets so she wouldn't walk away empty handed. Merry Early Christmas to me!!

For gift wrapping! One of my favorite parts about the holiday season is choosing which paper I will wrap my gifts in. As you can see, once I've got the paper the gifts all get wrapped pretty quickly! Oh and hey Terri, here's your hint. That one in the back is yours. Good luck figuring that out!!

Opening weekend of deer season 2011 was successful! Tim, Ron, Casey and JC hunted at Osceola and my Dad and Chris headed north to my grandparents house in Green City. (I haven't gone yet b/c we are planning to go up to north Missouri for second weekend.)

Casey had been off hunting for two weeks straight up in Fayette and hadn't gotten anything. He was getting a little frustrated but decided to come down to Osceola for the fun, if nothing else. I don't think he actually thought we would get anything so it was a big decision to come down. But opening morning of gun season he took out his bow (he only bow hunts) and got this monster! First kill on the Osceola land was a big 'ole buck! Way to go!
Tim's turn. Casey got the buck on opening morning. Tim had taken his gun and had a shot at a deer, but missed. Around noon he decided the deer might be moving so him and Casey took off to their stands. Since Casey had gotten a buck already he decided to video tape Tim's hunt, and good thing! Tim decided to take his bow that afternoon instead of his gun. Tim said they hadn't been in their stands very long and out came this buck zig-zaggin right toward him. He said it was only about 20 seconds from when we saw him to when he shot. Boom! Deer down. With the bow too! He hadn't killed a buck with is bow in 7 years. And Casey got it all on video! I haven't gotten to see the video yet, but when I do I will get it posted on here.
I've been a little behind on blogging, but we have been trying new recipes every week! This one is from two week ago, and I actually totally screwed it up! You will see...
- 2 whole Boneless, Skinless Chicken Breasts (we used two cans of chicken)
- 4 cups Cooked Brown Rice
- ¾ cups Frozen Corn
- 15 ounces, fluid Can Black Beans, Drained And Rinsed
- 1 cup Plain Greek Yogurt (or Sour Cream, we used Sour Cream)
- 4 ounces, fluid Can Green Chilis
- ½ cups Salsa
- 1 cup Low-fat Cheddar Cheese, Plus More For Topping
Preheat oven to 350F. In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine.
Make sure the yogurt and cheese are stirred in throughout the entire bowl. Season with salt and pepper if desired. Transfer to an oven-safe dish and top with extra cheese if you would like. Bake for 20-25 minutes, or until heated through.
This is when I realized I had messed up. I got it all mixed up and it wasn't creamy at all. I know from making our chicken and rice, if the rice is going to cook it has to be totally covered by liquid. Not that case this time. So I referenced my recipe and saw in bold letters COOKED RICE. Opps! So now I had 4 cups UN-cooked rice mixed in with all of my ingredients. There was no way that was all going into one casserole dish as instructed.
So we divided the casserole into two different dishes. Then added a can of chicken broth to both. One each hoping it would cook the rice.
It looked a little scary going in.
Hey, it worked! It was actually editable!
I would have liked it to be a little creamier, so we ate one casserole dish as it was. For the second dish (that we were going to freeze) I added in a can of Cream of Chicken soup and froze it. I will keep you posted if it turns out :)
Things I learned:
1. Read directions, fully.
2. If you mess up, don't give up!
3. Again, read directions :)

For us Halloween weekend wasn't full of costumes and crazy parties. We took a break from Springfield and went down to Big Cedar Lodge for a little getaway. We scored b/c Big Cedar ran a Deal of the Day with 417 so we got a two night stay and a fun fishing trip/meet and greet/dinner with Craig Campbell, an up and coming country singer. We had an awesome time and the leaves were amazing-ling beautiful! We headed down on Friday night and got there about 8 pm-ish. We got all checked in and ran down to the Buzzard Bar to grab a quick bit for dinner. We were a bit perterbed b/c yes this was the Friday night of game 7 in the World series, we are at a bar, we want to watch the game. But no, there is a signer in the bar, so game is off. So Tim is following on his phone. Once we get done eating we ran up to the conference center where they had the game on bug TV's. So we just missed a portion of it, but we got to see the last few innings. Saturday we slept in and went on our fishing excursion from 11-3 p.m. I bundled up b/c it was supposed to be cold, but it ended up being SO nice. We were on a pontoon boat and Logan (my boss) and her husband Dave, a fishing guide and another couple of ladies. It was super relaxed and we stocked our cooler with beer for the trip. Somehow we only had to come back to the marina once for a potty break :) Craig Campbell was on a bass boat and he zipped around to all of the pontoons and hung out. He came aboard and chatted for about 45 minutes to an hour. Showed up pics of his girls dressed up for Halloween his wife had just texted him and even drank a Miller Life (his favorite kind) with us. After the fishing trip we all took naps then met back at the conference center for dinner. After that it was down the hill to a Craig Campbell concert on the lawn. We had VIP seats right up front. He sounded just like on his CD. We weren't sure if we knew any of his songs, but we had Googled him and actually knew 5 of he 6 we listened too, so the concert was great. We hung by the bonfire and then hit up the Buzzard Bar for an night-cap. Sunday we headed back pretty early b/c Tim was going to head to Osceola to hunt that evening since he'd taken the rest of the weekend off. All in all it was the perfect weekend.

78! That's how many trick-or-treaters we had last night. We were pretty happy with our traffic :) Kari and John came for the night and helped us hand out the candy. We learned John is pretty selfish with candy and put his least favorite flavors on top so they'd go first. And Tim talked a big game about only letting the kids take two pieces, but under pressure he let them grab handfuls too! We had a few special guests: Ashton was Mike from Monsters Inc., Aidan the scary, bloody skeleton and Kingston the puppy. I think my favorite kiddo of the night was a little pink vampire who was about 7. She told me she wasn't dressed up, that she was a real vampire and she should probably tell her mom. Then ask if I was scared. Haha! Kids say the darnedest things. Oh and Tim ordered me an awesome return address label stamper thing and the Tim tried it out on John's head! Be expecting sweet return address labels on your Christmas cards.
