{New meal of the week} Crock Pot Chicken Soft Tacos

I'm not the best cook ever. Honestly I don't really cook very often. I have a few signature things we cook a lot: canned chicken soft tacos, chicken Parmesan, cashew chicken, steaks and burgers of course, salad, frozen pizza (sad, but true), Hamburger Helper, grilled cheese and soup, chicken and rice; none of which I even need a recipe for anymore.  I am going to try to change that! I have a new goal to make something new, from a recipe, one time a each week. I just discovered the Crock Pot Girls website which has TONS of recipes. A lot of my weekly meals might be made in the crock pot :) But that still counts!

Okay, here we go. Week one. 
Crock Pot Chicken Soft Tacos

1 lb chicken
2 pkgs taco seasoning
1 can rotel
1 can black beans
1 cup frozen corn
Chicken broth

Put first five ingredients in crock pot and pour in enough chicken broth to cover everything.  Cook on low approx. 5 hours or until chicken is cooked through and the house smells AMAZING!  We cooked this all day while we were at work.

Shred chicken and return to pot.

Served anyway you like it. I opted for nachos, so did Josey. Tim went for soft tacos and Thomas did a taco salad.
We doubled the recipe b/c Thomas and Josey were coming over for dinner. Probably shouldn't try new recipes when guests are coming over but we figured we could always throw our good ole' canned chicken on the stove and eat that if we needed too. But we passed the test!!

Things I learned: 
1. At 6 a.m. buying the "trimmed and ready" chicken might be worth the extra $7. 
2. We probably could have just doubled the chicken and not the rest of the ingredients and still had plenty for four people.

Grant's Wedding

Grant Bass, Tim's good friend high school and usher in our wedding, got married in St. Louis on Friday, September 23. The wedding was at The Jewel Box in Forest Park. Note to anyone who goes there, you can park anywhere! We didn't know that. We drove around and found a parking spot that was a little bit of a walk to the venue. When we left the wedding there were cars all over the street right beside The Jewel Box. Note to self, if there aren't "no parking" signs, just park anywhere. The reception was at Orlando's, a banquet hall back toward our hotel. It was pretty convenient, it was just a few miles from our hotel. We didn't know anyone really, except Grant and Shelly, Adam and Amanda Brooker, Adam's and Grant's parents. They had a live band, which was a blast! And an open bar, which was also equally a blast :)

Labor Day Weekend 2011

We had a fun holiday weekend at Nemo with Ron, Terri, Kristin, Casey and Rylan. Rylan is getting so big! She is actually responding with yes and no and not just a head nod. Her little voice is adorable. She loved the slide and the swinging, but she did not want to get back in her wagon :) Which you hear you say a few times in these videos! I just put up one video of the slide, but I had quite a few. In each one she does that hilarious little high-step run back to the steps. She just could get enough!

Glider is complete!

When my Grandma Wanda passed away in December of last year I was fortunate enough to get her glider. We don't have kids yet, but the thought of getting to rock my babies to sleep in a chair that she used to spend hours in just felt right. It was a really lovely shade of burgundy though, so I knew I needed to update it a little. I found some fabric online so Terri and Nanny (Tim's mom and gma) bought it for me and when my Grandma Margaret was in town for Aidan's birthday she (with the help of my Gpa and Dad) recovered it! It looks amazing!! Thanks so much everyone, it will be perfect in my nursery, someday. For now, it is in our bedroom :)

It was a gorgeous Friday in August so Trina, Kari, Katie and I decided to enjoy the patio weather with a few cocktails!
I had to post a picture of this drink. I normally don't like sweet and fruity, but this drink was the PERFECT blend! Not too sweet or fruity. It is the "Fruit Wave" listed below. I will be attempting to make this when the Johnson Beach Club opens back up next summer!

Oh, and we ran into Keith Stone. You know, the spokesperson for Keystone Beer?! Yeah, I didn't know him either, but he was totally legit.

Craig Morgan Concert

On August 18 he was kicking off the PBR "Professional Bull Riding" at the Party in the Parking Lot at PFI Western Store. The tickets were so cheap, I think $25 a pop, so we decided to go! If you don't know the name I bet you know his song Redneck Yacht Club. It is pretty popular. We met JC and Kristina Loveland at Touch for a few drinks and then went to the concert. Stina was a trooper, you can't tell she is sick in the pictures b/c we fed her some alcohol but she actually had shingles. Which are very painful. Ouch!

We also ran into our friend Abby whose husband Justin David is in the country music circuit. That day they bango player for Craig Morgan quit and they offered Justin the job. I will keep you posted if he takes it!

{Happy Birthday} Everyone!

It's has been a little while since my last post, and a lot of birthdays have gone by!

First, my dad! We were in route back from Wyoming on his actually birthday (July 24) so we celebrated later that week at Nakato and then Fruity Land for dessert. We thought ahead for his gift and bought him a Under Armor Polo while on vacation that said Jackson Hole. We got a text later that night that it fit! Whew!
Second, Kristina Loveland on August 4. Her and I, along with her sister-in-law and another girlfriend, went to Flame (during 417 Magazine's Restaurant Month) and enjoyed an awesome dinner and some yummy wine. Kristina and I both tried oysters for the first time. Kristina looks scared in this picture, but she really ended up liking them!

Now it's Aidan's turn. August 21 he turned 7. 7! I can't believe it. His birthday was on a Sunday, so Tim and I, along with my mom and dad, Chris, Aidan and Ashley headed down to Silver Dollar City for the day. Shout out to Lisa Rau for the free lunch! Then we came back to Springfield for dinner at Nakato and Fruity Land for dessert!

Carson and Ethan Loveland turned 4 a week after Aidan on the 29th. Their party was actually the same day as Aidan's birthday party so we took Aidan with us to their party while Chris got things together for Aidan's party. It was at P3 Pottery so all of the kids got to paint any little item they wanted. Aidan went for the alligator. He did a pretty good job! He is wearing the hat and shirt we got him for his birthday :)

September 8 is my mom's birthday! I somehow got no pictures, but you guessed it, we ate Nakato and went to Fruity Land! For her birthday I put together a photo book of our Wyoming vacation. She knew it was coming, but hadn't seen it yet until that night. I think she loved it and was really excited that she didn't have to put one together herself!

A few days later, on September 10 was Kari's 29th birthday. We had a few celebrations. Trina was busy on her actually birthday, so Kari and I got deluxe pedi's the night before and Trina met us at Kremer's for dinner and then we went to Campbell 16 to see a movie. The next night Tim and I met up with John, Kari, Dan and Greg for a few cocktails and appetizers at FLO. Kari, of course, had "mocktails" since at this point she was 15 weeks preggers! It was a pretty sentimental birthday for her b/c it was her last birthday in her twenties and the last one not having a kid.
